Barbara Costello, better known as @BrunchwithBabs on Instagram and Tiktok, is a mother of four, grandmother of eight and adopted grandmother to her millions of followers on social media. She’s the USA Today bestselling author of “Celebrate with Babs” and has a second book in the works. She is a regular guest on Today, GMA and Drew Barrymore, where she shares all her household tips, tricks, hacks and delicious recipes. A former teacher and preschool founder, she is also a wife to her loving husband, Mr. Babs.

Kiki’s Father TASSO’S MAROULOSALATA Recipe:

Ingredients

  • 2 Romaine hearts very finely chopped.
  • 6 sprigs of green onion chopped finely (green and white parts included)
  • A small bunch of dill chopped finely approx. ¼ cup.
  • A small bunch of parsley chopped finely (approx. ¼ cup) – optional but I love to add it for more flavor and greens.
  • 2 very small English cucumbers (or half a large one) sliced down the middle lengthwise and then sliced in pieces.
  • ¼ cup of crumbled feta.

Dressing

  • ½ cup extra virgin olive oil.
  • 2 tablespoons red wine vinegar or freshly squeezed lemon juice.
  • ¼ teaspoon sea salt.
  • Cracked black pepper to taste (optional).
  • 1 teaspoon dried Greek oregano.

Directions

  1. Combine all fresh green ingredients in a large salad bowl.
  2. Whisk together all the dressing ingredients and then drizzle over salad and toss well to combine. Adjust the seasoning to taste along with the amount of vinegar/lemon juice.
  3. Top with crumbled imported feta and serve.
